Oxidation

Oxidation is a chemical reaction involving the loss of electrons from a molecule, often through interaction with oxygen or other oxidising agents. Certain amino acid residues, such as methionine and cysteine, are particularly susceptible to oxidation, which can alter a peptide's structure and is a common cause of degradation during storage.
